Lara’s 30 day challenge- Day 2

2017- a FRESH new YEAR!

I’m Lara, co- founder of Foodstory.

I was feeling a bit demotivated and unchallenged towards the end of last year- 2016

So to start this year off I decided to do a 30 day challenge, a few staff and friends are getting involved too.

For the whole month of January we’re cutting out all dairy, meat, fish and refined sugar from our diet AND we’re
taking up yoga/stretches and/or mindfulness for 15-20 minutes a day.

Today-

Recipes:

Rice paper, Nori and Courgette rolls

Another great day. Feeling inspired.

A run/walk up Carlton hill.

Breakfast- 

Avocado, tomato, garlic and salt on rice cracker

Banana, tahini and honey on toast

Lunch-

Picnic lunch with the left overs from yesterday- Dahl and baba ganoush, humous and black olive on rice crackers! Yum.

Walked 10 miles along the sea towards Cramond. Very cold so felt amazing coming home! The walk was very refreshing though. 🙂

Dinner- 

Rice paper, Nori and Courgette rolls-

Fillings- Sliced up half an avocado, got some parsley, sliced up a few carrots very thinly, boiled a bit of brown rice, and roasted thin sweet potato pieces in the oven (200 degrees, threw on salt, chilli powder and olive oil- 20 mins or until soft)

Sauce- one tablespoon of almond butter, 2 tablespoons of olive oil, half a lime, one tablespoon of honey/maple/agave

Making the rolls-

I grilled the thinly sliced courgettes(just two) on a pan – I got around 10 slices. Until they were soft/grilled. Before I did this- I dapped them and left them for 10 mins on white kitchen towel so that they wouldn’t be too wet. I also did the same thing once I grilled the two sides of the courgette.

I placed a few sweet potato sticks, parsley, avocado and almond sauce in the courgette strip and rolled it up.

I then placed the brown rice, a few sweet potato sticks, parsley, avocado, almond sauce and peanuts into the nori sheet or spring roll rice paper and made a few rolls from these.

I drizzled more of the almond dressing on all the rolls at the end.

They all tasted amazing and I could eat all of it. Everything was gluten free and didn’t contain any dairy, meat, fish or refined sugar. Fantastico!!!!

Evening snack-

Fruit mix- pear, apple, cinnamon, mixed seeds and nuts – can drizzle maple/agave/honey and lime on top too if you like!
