Lara’s 30 day challenge- Day 10

2017- a FRESH new YEAR!

I’m Lara, co- founder of Foodstory Scotland.

I was feeling a bit demotivated and unchallenged towards the end of last year- 2016

So to start this year off I decided to do a 30 day challenge, a few staff and friends are getting involved too.

For the whole month of January we’re cutting out all dairy, meat, fish and refined sugar from our diet AND we’re
taking up yoga/stretches and/or mindfulness for 15-20 minutes a day.

I live/work in Aberdeen Friday to Tuesday and in live/work in Edinburgh Tuesday to Friday in case you wondered why I’m in two cities a lot of the time.

Day 10- 

Up at 5am. Headed to the cafe for 6am to watch bread maker Scotty make his sour dough. It was so much fun. Watching it from the beginning, watching it rise, to then putting it in the oven. We had to wait half an hour for the oven to pre heat so we had breakfast.


Grilled garlic mushrooms, gluten free toast or sour dough toast, rocket, avocado and chilli with our own extra virgin olive oil infused with garlic and chilli drizzled over it. So tasty.


Headed to B&Q to find herbs to grow in the allotment and then we arrived just in time for sunrise. It was incredible. Its so beautiful up there. We picked mint, thyme and rosemary.

Lunch/2nd breakfast- 

Parx cafe’s amazing breakfast with

gluten free toast, mashed avocado, tomato and toasted seeds. It was amazing.

Then off on the train to Edinburgh.

I had an almighty foods cashew spread with a rice cracker for a snack on the train to Edinburgh.


I got locked out of my flat so 2 cafes saved my DAY! Cafe Marlayne and

Red Kite Cafe- they gave me a free scone- 🙂 Saved it for my flatmate. 

Its such a lovely place. Check it out if ever in Edinburgh. Its just off Easter Road, on Cadzow place.


Stuffed peppers-

Cooked brown rice. Then threw shiitake mushrooms and beetroot into a pan with garlic, chilli and I also put baby sweet corn into it too. Mixed the feeling with the cooked rice and filled the peppers with it. I put it into the oven at 180 degrees for around 25 minutes. I added a bit of green pesto and houmous to it too! YUM.


I didn’t have the energy to do Yoga today. I’d got locked out of my flat earlier in the day and was just too exhausted so I just did 10 minutes of stretches/a little Yoga and went to bed.
