2017- a FRESH new YEAR!
I’m Lara, co- founder of Foodstory.
I was feeling a bit demotivated and unchallenged towards the end of last year- 2016
So to start this year off I decided to do a 30 day challenge, a few staff and friends are getting involved too.
For the whole month of January we’re cutting out all dairy, meat, fish and refined sugar from our diet AND we’re
taking up yoga/stretches and/or mindfulness for 15-20 minutes a day.

Day 3-
Run/walk up Carlton hill
Met a friend in RED KITE CAFE– on Cadzow place, Edinburgh- near Easter road
Beautiful place but no Vegan/Gluten free food BUT had a brilliant Artisan Coffee- coffee
Breakfast
Walked to The Manna House Bakery on Easter Road another great place and had green tea- my friend had a vegan aubergine, roasted pepper, black olive tapenade sandwich on wholemeal bread
I had a wild rice, crispy kale, honey and chilli salad- odd breakfast I know 🙂
Break
Cycled UP HILL, towards Morningside. Tough on a single speed bike.
Had more green and peppermint tea in Artisan Roast and Project Coffee and snacked on a Hangry Food Co. bar which contained dates, almonds, cashews, walnuts, sunflower seeds, poppy seeds and water. YUM.
Lunch
Left over roasted sweet potato and courgette from yesterday and rice crackers with garlic, avocado, and tomato.
And
A fruit salad with grapes, melons, oranges and apples.
Dinner
Had a great 25 minute swim in the Nuffield Pool and then made
An aubergine, mushroom and spinach dish.
I just threw in
2 garlic cloves, a little oil, then chopped 350 grams of shiitake mushrooms
then
water, salt, pepper, cumin, honey (can use maple or agave), sliced baby aubergines and spinach
cooked it on the pan for around 25 mins at a medium heat and kept adding water when needed.
placed it on a bed of brown rice

Dessert-Â
I’m going to finish off Sundays vegan, gf banana bread. 🙂
and then do 15 mins of Yoga.
Yay!
