Lara’s 30 day Challenge- Day 6

2017- a FRESH new YEAR!

I’m Lara, co- founder of Foodstory Scotland.

I was feeling a bit demotivated and unchallenged towards the end of last year- 2016

So to start this year off I decided to do a 30 day challenge, a few staff and friends are getting involved too.

For the whole month of January we’re cutting out all dairy, meat, fish and refined sugar from our diet AND we’re
taking up yoga/stretches and/or mindfulness for 15-20 minutes a day.

Day 6-

Back to work! Yip eeeeee.

I actually had so much energy today heading into work today. I must have been excited.


Smoothie bowl– threw in frozen berries, a banana, coconut milk and agave (i’ll try dates tomorrow)

and then topped it with coconut, chia, our superfood granola and banana. Yum.

I still felt hungry after so I had a bit of Sandy’s garlic mushroom toast- New on the menu. So so tasty. It was on sour dough toast, topped with rocket, and then the garlic mushrooms on top– chilli and garlic oil drizzled on top.

Changed the menu, had a few meeting.

Headed off to unload the van and horse box with all the furniture so I took a picnic.


Carrot salad– grated carrots, fresh ginger, red chilli, raisins, mixed seeds, spring onions, coriander chopped, lime juice and olive oil.

Gluten free buck wheat pasta salad– sautéed mushrooms (vegan butter and garlic), kale, olive oil, lemon juice and cashew cheese (cashews, nutritional yeast, salt, onion flakes, water)- I’ll upload the recipe by the end of the week.

Nori roll- sunflower spread, avocado, red pepper, carrot, roasted squash and spinach.

Treat time– Shared a raw raspberry, fig cake with a peanut and almond base- yum


Black bean burgers with caramelised onion and cashew cheese on a base of spinach and mushroom. Soooooo good. I’ll put up the recipe tomorrow.

Then did Yoga when I got back. That one was an easy one. Happy- A great day.
