Lara’s 30 day challenge- Day 8

2017- a FRESH new YEAR!

I’m Lara, co- founder of Foodstory Scotland.

I was feeling a bit demotivated and unchallenged towards the end of last year- 2016

So to start this year off I decided to do a 30 day challenge, a few staff and friends are getting involved too.

For the whole month of January we’re cutting out all dairy, meat, fish and refined sugar from our diet AND we’re
taking up yoga/stretches and/or mindfulness for 15-20 minutes a day.

Day 8-

Didn’t sleep great so ran down to catch the sun rise. What an amazing morning. The beach was just beautiful- Great Run.

Then ran to the cafe just in time for YOGA GRANOLA. On every Sunday at 10.30 am. Laura does Yoga for one hour- check her out- https://www.facebook.com/Laura-McCrimmon-Yoga-Teacher-276875668999589/?pnref=story

And then Foodstorys superfood Granola with sugar free berry compote and dairy free yoghurt. Its just help yourself and the vibe was just so lovely and chilled.

AND

The yoga was sooooo GOOD. It was my first ever class and the hour just flew by.

Breakfast-

Granola and banana, berry, coconut milk smoothie. YUM.

Lunch-

Toast, gluten free for me with grilled garlic mushrooms, rocket, red chilli, avocado and a bit of extra virgin olive oil drizzled on top.

Went to get tiles to do up the bathrooms. (We’re doing them up finally as they’re pretty damp)

Dinner-

Vegan pizza– It was actually incredible-

Tomato sauce-

One red onion in oil, a tin of tomatoes, a bit of puree, salt, pepper, a bit of honey (or agave, maple). Cooked it for around 20 minutes until yummy and think.

Roasted courgette in oven for 20 minutes.

Spread the tomato sauce, threw on some kale, green pesto, black olives (the yummy greek, wrinkly one), courgette, broccoli and cherry tomato on top. 

Put in a pre heated oven for 15-20 minutes at 200 degrees.
