Lentil and Cauliflower Dahl

A recipe which makes the best use of store cupboard ingredients, perfect for current times when fresh food might be tricky to come by and you need something nutritious to feed the family. Lentils are a nutrition powerhouse and a little goes a long way, so ideal when you are cooking on a tight budget; packed with protein, iron, fibre to feed the healthy gut bacteria and B vitamins to help support and balance the nervous system, which may be under strain right now.

Ingredients
  • 1 large onion
  • 4 cloves of garlic
  • 5cm chunk ginger
  • 1 cup red lentils
  • 4 cups vegetable stock
  • 1 small cauliflower
  • 1 tsp each cumin, coriander, turmeric
  • 1/4 tsp cinnamon, cayenne pepper
  • 2 tbsp tomato paste
  • 1/2 block of creamed coconut
  • Cup of spinach
  • tsp black sesame seeds
Method
  1. Saute the chopped onion, ginger and garlic for 5 minutes

  3. Add the cauliflower and sock and bring to the boil
  4. Simmer for 20 minutes until the lentils are cooked through
  5. Add the tomato paste and coconut and allow to simmer for another 5 minutes
  6. Add two large handfuls of spinach
  7. Top with black sesame seed
Serve with:
  • Brown rice, warm naan breads or chapatis
